Season and sauté all your vegetables and garlic in extra virgin olive oil using a heavy skillet pan, once sautéed add fresh diced tomatoes and tomato puree.
Place or crumble the Rudd’s Black and White Pudding Roulade slices into the mix, bring to a boil then cover and let simmer for 15 minutes. Then uncover and cook for a few more minutes to let sauce thicken.
Add the whole eggs evenly around the skillet, allow to simmer over medium heat until egg whites have settled.
Garnish with Parsley and enjoy!
